Ingredients

12 ounces egg noodles

2 cans (5 ounces each) tuna, drained

1 cup frozen peas

1 cup diced carrots (optional)

1 can (10.5 ounces) cream of mushroom soup

1 cup milk

1 ½ cups shredded cheddar cheese, divided

1 cup breadcrumbs or crushed crackers

2 tablespoons chopped fresh parsley or chives

½ teaspoon salt

¼ teaspoon black pepper

Instructions

1. Preheat oven to 400°F (200°C).

2. Cook the egg noodles according to package directions until al dente. Drain and set aside.

3. In a large bowl, mix together the drained tuna, frozen peas, diced carrots (if using), cream of mushroom soup, milk, half of the shredded cheddar cheese, salt, and pepper.

4. Stir in the cooked noodles until everything is well combined.

5. Transfer the mixture to a greased 9×13-inch baking dish.

6. Sprinkle the remaining cheese evenly on top, followed by the breadcrumbs or crushed crackers.

7. Bake for 20-25 minutes, until bubbly and the top is golden brown. Broil for 1-2 minutes for extra crispiness if desired.

8. Let cool slightly, then garnish with chopped parsley or chives before serving.

Notes

For extra flavor, add a dash of garlic powder or a squeeze of lemon juice to the filling.

To make it gluten-free, use gluten-free noodles and breadcrumbs.

Swap in shredded chicken or canned salmon for tuna if preferred.
