These Almond Joy Cookie Bars are one of my favorite easy dessert recipes because they bake up thick, buttery, and full of chocolate, coconut, and almond flavor. They are perfect for quick dessert cravings, party food ideas, holiday baking, easy recipe planning, and sweet snack moments when you want a homemade bar cookie that feels special but comes together with simple pantry ingredients.
Ingredients
1 cup unsalted butter, softened
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups sweetened shredded coconut
1 1/2 cups semi-sweet chocolate chips
3/4 cup sliced almonds
Instructions
1. Preheat the oven to 350°F and line a 9×13-inch baking pan with parchment paper or grease it lightly.
2. Beat the softened butter, brown sugar, and granulated sugar together until light and creamy.
3. Add the eggs one at a time, then mix in the vanilla extract.
4. In a separate bowl, whisk together the flour, baking powder, and salt.
5. Add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
6. Fold in 1 1/4 cups of the shredded coconut, 1 1/4 cups of the chocolate chips, and 1/2 cup of the sliced almonds.
7. Spread the dough evenly into the prepared pan.
8. Sprinkle the remaining coconut, chocolate chips, and sliced almonds over the top.
9. Bake for 28 to 34 minutes, until the edges are golden and the center is just set.
10. Cool completely before slicing into bars.
Notes
Do not overbake these bars, because pulling them from the oven when the center is just set is the best way to keep them soft and chewy instead of dry.
