Description
Amish Potato Salad is a creamy, old-fashioned side dish that always feels right for a picnic, potluck, quick lunch, or easy dinner spread. With tender potatoes, chopped eggs, crisp celery, and a sweet tangy dressing, this easy recipe is one of my favorite food ideas when I need simple dinner ideas, cookout sides, and make-ahead comfort food everyone enjoys.
Ingredients
2 pounds Yukon Gold potatoes
4 hard-boiled eggs
3/4 cup mayonnaise
1 tablespoon yellow mustard
1 tablespoon apple cider vinegar
1 tablespoon granulated sugar
3/4 cup celery, finely diced
1/4 cup onion, finely diced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon celery seed
Instructions
1. Peel the potatoes and cut them into bite-sized chunks.
2. Boil the potatoes in salted water until fork-tender, about 10 to 12 minutes.
3. Drain the potatoes well and let them cool slightly.
4. Chop the hard-boiled eggs and finely dice the celery and onion.
5. In a large bowl, whisk together the mayonnaise, yellow mustard, apple cider vinegar, sugar, salt, black pepper, and celery seed.
6. Add the potatoes, eggs, celery, and onion to the bowl.
7. Gently fold everything together until evenly coated.
8. Cover and chill for at least 1 hour before serving.
Notes
Do not overcook the potatoes, or they will break down too much when mixed and the salad can turn mushy instead of creamy.
