1/2 cup old-fashioned oats
1/3 cup all-purpose flour
1/3 cup brown sugar
1/2 teaspoon cinnamon
1/4 cup unsalted butter, cold and cubed
1/2 cup caramel sauce (store-bought or homemade)
Instructions
1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and wrap the outside with foil to prevent leaks.
2. In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press evenly into the bottom of the pan.
3. Beat cream cheese until smooth. Add sugar and mix until combined. Add eggs one at a time, beating after each addition. Mix in vanilla extract. Pour over the crust.
