Instructions

1. Peel, core, and dice the apples. Toss them with 2 tablespoons sugar and 1/2 teaspoon cinnamon. Set aside to let the juices develop.

2. In a large bowl, whisk together flour, 1/3 cup sugar, baking powder, 1 teaspoon cinnamon, nutmeg, and salt.

3. In a separate bowl, whisk eggs, milk, melted butter, and vanilla.

4. Pour wet ingredients into dry, stirring until just combined. Do not overmix.
