Ingredients

12 ounces andouille sausage, sliced

1 pound large shrimp, peeled and deveined

1 green bell pepper, diced

1 yellow onion, diced

2 celery stalks, diced

3 cloves garlic, minced

1 cup canned diced tomatoes (with juices)

5 cups chicken broth (low sodium preferred)

1/2 cup all-purpose flour

1/2 cup vegetable oil

2 tablespoons Cajun seasoning

1 teaspoon dried thyme

1 bay leaf

1/2 cup green onions, sliced (for garnish)

1/4 cup fresh parsley, chopped (for garnish)

3 cups cooked white rice (for serving)

Salt and black pepper, to taste


Instructions

1. In a large Dutch oven or heavy pot, heat the oil over medium heat. Whisk in the flour and cook, stirring constantly, until the roux is a deep brown color, about 15-20 minutes.

2. Add the bell pepper, onion, and celery to the roux. Sauté for 5 minutes, then stir in the garlic and cook for 1 more minute.

3. Mix in the andouille sausage, diced tomatoes (with juices), Cajun seasoning, thyme, and bay leaf. Pour in the chicken broth and bring to a boil, then reduce heat and simmer for 30 minutes.

4. Add the shrimp and simmer for 4-5 minutes, until shrimp are pink and cooked through. Taste and season with salt and pepper as needed. Discard the bay leaf.

5. Serve gumbo hot over cooked white rice. Garnish with green onions and parsley.

Notes

Stir the roux constantly for the richest, nuttiest flavor—don’t walk away!

For extra flavor, use homemade chicken or seafood stock if available.
