Description

Ingredients

1 large cucumber

4 medium ripe tomatoes

1/2 red onion

1 green bell pepper

1/2 cup Kalamata olives

7 oz block feta cheese

3 tbsp extra virgin olive oil

1 tbsp red wine vinegar

1 tsp dried oregano

Salt and black pepper to taste


Instructions

1. Wash all produce thoroughly. Slice the cucumber into half-moons, cut tomatoes into wedges or chunks, thinly slice the red onion, and slice the bell pepper into rings.

2. In a large serving bowl, layer the cucumber, tomatoes, onion, and bell pepper. Add the Kalamata olives on top.

3. Cube the feta and place it gently over the salad without crumbling it.

4. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and black pepper.

5. Drizzle the dressing evenly over the salad.

6. Gently toss before serving to combine flavors while keeping the feta intact.

7. Serve immediately or let it sit for 10 minutes for deeper flavor.

Notes

Use block feta in brine for the best texture and flavor.

Add the dressing just before serving to keep vegetables crisp.

Chill your serving bowl beforehand to keep the salad cool on hot days.
