Description

These Authentic NY Bagels are chewy, golden, glossy, and packed with that classic bagel shop flavor I love. They make a quick breakfast, an easy recipe for weekend baking, and one of my favorite breakfast ideas when I want homemade food ideas that feel truly special. With a firm bread dough, a quick boil, and a hot bake, these bagels turn out with the perfect crust and soft, dense center every time.


Ingredients

4 cups bread flour

1 1/2 cups warm water

2 1/4 teaspoons active dry yeast

2 tablespoons granulated sugar

1 1/2 teaspoons salt

1 tablespoon barley malt syrup or honey

1 egg

2 tablespoons everything bagel seasoning


Instructions

1. Stir the warm water, yeast, and 1 tablespoon of the sugar together in a large bowl. Let it sit for 5 to 10 minutes until foamy.

2. Add the bread flour, remaining 1 tablespoon sugar, salt, and barley malt syrup or honey. Mix until a stiff dough forms.

3. Knead the dough for 8 to 10 minutes until smooth and elastic.

4. Place the dough in a lightly greased bowl, cover, and let it rise for 1 hour or until slightly puffy.

5. Divide the dough into 8 equal pieces. Shape each piece into a ball, then poke a hole through the center and gently stretch into a bagel shape.

6. Let the shaped bagels rest for 15 minutes while you preheat the oven to 425°F and bring a large pot of water to a gentle boil.

7. Boil the bagels for 30 to 60 seconds per side, then transfer them to a parchment-lined baking sheet.

8. Beat the egg and brush it over the tops of the bagels. Sprinkle with everything bagel seasoning.

9. Bake for 20 to 24 minutes, or until deeply golden brown.

10. Cool slightly before slicing and serving.

Notes

Do not skip the boiling step, because that is what gives these bagels their classic chewy crust instead of a soft bread-like exterior.
