Ingredients
1 cup unsalted butter melted
1 cup granulated sugar
1 cup packed light brown sugar
3 large eggs
2 teaspoons vanilla extract
0.25 cup Baileys Irish Cream
1 cup all purpose flour
0.75 cup unsweetened cocoa powder
0.5 teaspoon salt
1 cup semi sweet chocolate chips
4 ounces cream cheese softened
1 cup heavy cream cold
0.33 cup Baileys Irish Cream
0.75 cup powdered sugar
1 cup semi sweet chocolate chips
0.5 cup heavy cream
0.25 cup Baileys Irish Cream
0.25 cup chopped chocolate or chocolate shavings

Instructions
1. Preheat the oven to 350°F 175°C. Line an 8×8 inch baking pan with parchment paper leaving an overhang and lightly grease the parchment.
2. In a large bowl whisk together the melted butter granulated sugar and brown sugar until glossy and combined.
3. Add the eggs one at a time whisking well after each addition then whisk in the vanilla extract and Baileys Irish Cream.
4. Sift in the flour cocoa powder and salt then gently fold the dry ingredients into the wet mixture just until no dry streaks remain.
5. Stir in the semi sweet chocolate chips then spread the batter evenly into the prepared pan.
6. Bake for 25 to 30 minutes or until the edges are set and a toothpick inserted near the center comes out with a few moist crumbs.
7. Let the brownies cool completely in the pan on a wire rack before adding the next layer.
8. For the Baileys cream layer beat the softened cream cheese in a medium bowl until smooth and creamy.
9. Add the powdered sugar and beat until fully combined and no lumps remain.
10. Pour in the cold heavy cream and Baileys Irish Cream then whip with a mixer until thick fluffy and holding soft peaks.
11. Spread the Baileys cream evenly over the cooled brownie layer and chill the pan in the refrigerator for at least 30 minutes to set.
12. For the ganache place the semi sweet chocolate chips in a heatproof bowl.
13. Heat the heavy cream and Baileys Irish Cream together in a small saucepan or microwave safe cup until steaming but not boiling.
14. Pour the hot cream mixture over the chocolate chips let sit for 1 minute then stir until smooth glossy and fully melted.
15. Allow the ganache to cool for 5 to 10 minutes until slightly thickened but still pourable then pour it over the chilled Baileys cream layer letting it gently spread and drip toward the edges.
16. If desired sprinkle chopped chocolate or chocolate shavings over the top and garnish with fresh mint just before serving.
17. Chill the brownies for another 30 to 60 minutes or until the ganache is set then lift the slab out of the pan using the parchment and cut into squares.
Notes
For the best layers and clean slices make sure the brownies are completely cool before adding the Baileys cream and allow both the cream and ganache to chill until set—rushing this step can cause the layers to slide and the squares to look messy.
