Ingredients

500g ground chicken

1 cup ricotta cheese

1/2 cup grated parmesan cheese

1/2 cup breadcrumbs (regular or gluten-free)

1/4 cup chopped fresh parsley

2 tablespoons chopped fresh basil

2 cloves garlic, minced

1/4 cup finely diced onion

1 teaspoon salt

1/2 teaspoon black pepper

Olive oil spray (for baking sheet)

Optional: 1 cup marinara or cream sauce for serving

Fresh basil or parsley for garnish

Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper; lightly spray with olive oil.

2. In a large bowl, mix together ground chicken, ricotta, parmesan, breadcrumbs, parsley, basil, garlic, onion, salt, and pepper until just combined.

3. Form the mixture into meatballs, about 2 inches each, and place on the prepared baking sheet.

4. Bake for 20-25 minutes until meatballs are golden and cooked through; broil 1-2 minutes for extra browning if desired.

5. Optional: Warm meatballs in your favorite sauce before serving, and garnish with fresh herbs.

Notes

Don’t overmix the meatball mixture or they can become dense—mix just until combined.

For extra flavor, finish the baked meatballs under the broiler for a golden crust.

Freeze leftovers in a single layer, then store in a zip bag for easy meal prep.
