Ingredients

2 ripe but firm pears

1/2 cup crumbled feta cheese

1/3 cup dried cranberries

2 tablespoons honey, plus more for drizzling

1 tablespoon olive oil

1 teaspoon fresh thyme leaves

1/4 teaspoon black pepper

1/8 teaspoon red pepper flakes


Instructions

1. Preheat the oven to 375°F and lightly grease a small baking dish.

2. Slice the pears in half lengthwise and scoop out the cores to create a small well in each half.

3. Arrange the pear halves cut side up in the baking dish.

4. Drizzle the pears with olive oil and season with black pepper.

5. Fill each pear half with crumbled feta and dried cranberries.

6. Sprinkle the thyme leaves and red pepper flakes over the top.

7. Bake for 25 to 30 minutes, until the pears are tender and the feta is slightly softened.

8. Remove from the oven and drizzle with honey while warm.

9. Serve immediately with extra thyme or an extra drizzle of honey if desired.

Notes

Do not use overly ripe pears, or they can collapse and turn mushy before the toppings are fully warmed through.
