Description

These Banana Pudding Brownies are a rich, easy dessert with a fudgy brownie base, a creamy banana pudding topping, and crunchy vanilla wafer crumbs on top. Ingredients

1 box brownie mix

2 large eggs

1/2 cup vegetable oil

3 tablespoons water

1 package instant banana pudding mix (3.4 ounces)

2 cups cold milk

8 ounces cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 1/2 cups whipped topping

2 medium bananas, sliced

1 cup vanilla wafer cookies, crushed

1/4 cup melted peanut butter or peanut butter glaze, optional


Instructions

1. Preheat the oven to 350°F and line a 9×13-inch baking pan with parchment paper or lightly grease it.

2. In a large bowl, mix the brownie mix, eggs, vegetable oil, and water until just combined.

3. Spread the batter into the prepared pan and bake for 25 to 30 minutes, or until the center is set.

4. Let the brownies cool completely in the pan.

5. In a medium bowl, whisk together the banana pudding mix and cold milk until it begins to thicken.

6. In a separate bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.

7. Fold the pudding into the cream cheese mixture, then gently fold in the whipped topping until fluffy.

8. Spread the banana pudding layer evenly over the cooled brownies.

9. Cover and chill for at least 2 hours.

10. Right before serving, top with sliced bananas, crushed vanilla wafer cookies, and melted peanut butter or peanut butter glaze if using.

11. Slice into bars and serve chilled.

Notes

Do not add the banana slices too early, or they can brown and make the top look wet after chilling.
