Ingredients

2 cups vanilla wafer crumbs

6 tablespoons unsalted butter, melted

24 ounces cream cheese, softened

1 cup granulated sugar

1 cup sour cream

3 large eggs

1 cup mashed ripe bananas

1 tablespoon vanilla extract

1 cup heavy whipping cream

2 tablespoons powdered sugar

2 bananas, sliced

1/2 cup crushed vanilla wafers

1/3 cup caramel sauce

1 tablespoon rainbow sprinkles, optional


Instructions

1. Preheat the oven to 325°F and grease a 9-inch springform pan.

2. Mix the vanilla wafer crumbs with melted butter until evenly combined.

3. Press the crust mixture firmly into the bottom of the pan and bake for 8 minutes. Let it cool.

4. Beat the cream cheese until smooth, then mix in the sugar.

5. Add the sour cream, mashed bananas, and vanilla extract and mix until creamy.

6. Add the eggs one at a time, mixing on low speed just until combined.

7. Pour the filling over the cooled crust and smooth the top.

8. Bake for 55 to 65 minutes, until the edges are set and the center is slightly jiggly.

9. Turn off the oven, crack the door, and let the cheesecake rest for 30 minutes.

10. Cool completely, then refrigerate for at least 6 hours or overnight.

11. Whip the heavy cream with powdered sugar until soft peaks form.

12. Top the chilled cheesecake with whipped cream, banana slices, crushed vanilla wafers, caramel sauce, and sprinkles if using.

13. Slice and serve cold.

Notes

Do not overmix the batter after adding the eggs, because too much air can cause the cheesecake to crack and bake unevenly.
