1 cup jasmine rice

2 cups water

1 1/2 pounds salmon fillet, skin removed and cut into cubes

1 tablespoon olive oil

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup mayonnaise

1/3 cup sweet chili sauce

2 tablespoons sriracha

1 tablespoon honey

1 tablespoon soy sauce

2 tablespoons chopped green onions

2 tablespoons chopped parsley or cilantro

1 tablespoon sesame seeds

1 cup shredded carrots

1 cup diced cucumber

2 cups mixed greens


Instructions

1. Rinse the jasmine rice, then cook it with the water according to package directions until fluffy.

2. In a medium bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and soy sauce until smooth.

3. Pat the salmon dry and cut it into bite-sized cubes.

4. Toss the salmon with olive oil, paprika, garlic powder, salt, and black pepper until evenly coated.

5. Arrange the salmon pieces in a single layer on a lined baking sheet or cook them in a hot skillet.

6. Bake at 400°F for 10 to 12 minutes or cook in a skillet for 6 to 8 minutes, turning as needed, until the salmon is cooked through and lightly caramelized.

7. Toss or brush the cooked salmon with a few spoonfuls of the bang bang sauce.

8. Divide the rice among serving bowls.

9. Top each bowl with salmon, shredded carrots, diced cucumber, and mixed greens.

10. Drizzle with the remaining sauce, then finish with green onions, parsley or cilantro, and sesame seeds.
