1 1/2 pounds beef stew meat
4 cups broccoli florets
1/2 cup low-sodium soy sauce
1 cup beef broth
2 tablespoons brown sugar
1 tablespoon cornstarch
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
2 tablespoons vegetable oil
1 teaspoon sesame oil
2 tablespoons water
Instructions
1. Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add 1 1/2 pounds beef stew meat and brown on all sides for 4 to 5 minutes. Remove and set aside.
2. Add remaining 1 tablespoon vegetable oil to the skillet. Stir in 3 cloves minced garlic and 1 tablespoon minced fresh ginger. Cook 30 seconds until fragrant.
3. Pour in 1/2 cup low-sodium soy sauce, 1 cup beef broth, and 2 tablespoons brown sugar. Stir well and return beef to the pan. Bring to a gentle simmer.
4. Reduce heat to medium-low, cover, and simmer 20 to 25 minutes until beef is tender.
5. Add 4 cups broccoli florets. Cover and cook 5 to 7 minutes until bright green and just tender.
