Ingredients

450g ground beef

1 medium onion, chopped

2 cloves garlic, minced

400g canned black beans, rinsed and drained

2 cups enchilada sauce (divided)

1 can (113g) diced green chilies

12 corn tortillas (6-inch)

1½ cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 tablespoon olive oil

¾ teaspoon salt

½ teaspoon black pepper

Chopped fresh cilantro, for garnish (optional)

Diced tomatoes, for garnish (optional)


Instructions

1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

2. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté for 3 minutes. Add garlic and cook 1 minute.

3. Add ground beef, salt, and pepper. Cook until browned, breaking up meat as it cooks. Drain any excess fat.

4. Stir in black beans, diced green chilies, and 1 cup of enchilada sauce. Simmer for 2–3 minutes. Remove from heat.

5. Spread ½ cup enchilada sauce on the bottom of the baking dish. Layer 4 tortillas to cover the bottom.

6. Top with half the beef mixture. Sprinkle with 1 cup cheddar and ½ cup Monterey Jack cheese.

7. Add another layer of 4 tortillas. Spread remaining beef mixture. Pour ¾ cup enchilada sauce over, then add half the remaining cheese.

8. Top with final 4 tortillas. Spread remaining ¾ cup enchilada sauce and sprinkle the rest of the cheese.

9. Cover with foil and bake for 20 minutes. Remove foil and bake 10 more minutes until cheese is bubbly and golden.

10. Let rest for 10 minutes before slicing. Garnish with cilantro and diced tomatoes if desired. Serve warm.

Notes

For best texture, use corn tortillas—flour tortillas will make the casserole softer.

Adjust the heat by choosing mild or hot enchilada sauce and chilies.

Casserole freezes well—cool completely, cut into portions, wrap tightly, and freeze up to 2 months.
