Ingredients
12 ounces wide egg noodles
3 cups cooked chicken, shredded or chopped
4 tablespoons butter
1 cup diced yellow onion
1 cup diced carrots
1 cup diced celery
2 cloves garlic, minced
1/4 cup all-purpose flour
3 cups chicken broth
1 cup whole milk
1/2 cup heavy cream
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/2 teaspoon paprika
1 cup frozen peas
2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
1. Bring a large pot of salted water to a boil. Cook the egg noodles according to package directions until al dente. Drain and set aside.
2. In a large, deep skillet or Dutch oven, melt the butter over medium heat. Add the onion, carrots, and celery. Sauté for 5–6 minutes, until the vegetables are softened. Add the garlic and cook for 1 minute more.
3. Sprinkle the flour over the vegetables and cook, stirring constantly, for 2 minutes to remove the raw flour taste.
4. Gradually whisk in the chicken broth, scraping the bottom of the pan. Bring to a simmer and cook until the sauce starts to thicken, about 2–3 minutes.
