Ingredients
10 cups crusty bread, cut into 1-inch cubes, day-old or lightly toasted
1/2 cup unsalted butter
2 cups yellow onion, diced
1 1/2 cups celery, diced
3 cloves garlic, minced
2 tablespoons fresh sage, chopped (or 2 teaspoons dried sage)
2 tablespoons fresh thyme, chopped (or 2 teaspoons dried thyme)
1/4 cup fresh parsley, chopped
2 1/2 cups chicken or vegetable broth, low sodium
2 large eggs
1 1/2 teaspoons salt
1 teaspoon black pepper
Instructions
1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
2. Spread the bread cubes on a baking sheet and bake for 10-15 minutes until dry and slightly golden. Let cool.
3. In a large skillet, melt butter over medium heat. Add onion and celery. Sauté until softened, about 8 minutes.
4. Add garlic, sage, thyme, and parsley. Cook for another 1-2 minutes until fragrant.
5. In a large mixing bowl, combine the bread cubes and sautéed vegetables/herbs. Toss gently to combine.
6. In a separate bowl, whisk together broth, eggs, salt, and pepper. Pour over the bread mixture. Toss until evenly moistened but not soggy.
7. Transfer the mixture to the prepared baking dish. Cover with foil and bake for 30 minutes.
8. Remove foil and bake for an additional 20-25 minutes, until the top is golden and crisp.
