Ingredients

3 cups corn kernels (fresh, frozen, or canned)

8 oz cream cheese, softened

1/2 cup mayonnaise

1/2 cup sour cream

1/2 cup cotija cheese, crumbled (or feta as a substitute)

1 jalapeño, finely chopped (seeds removed for mild, keep them for more heat)

2 tablespoons fresh lime juice

2 cloves garlic, minced

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/4 cup cilantro, chopped

Salt and pepper to taste

Optional toppings: extra cotija cheese, sliced jalapeños, more cilantro, extra chili powder

Instructions

1. Char the corn kernels in a dry skillet over medium-high heat for about 5 minutes until golden and slightly blistered. Transfer to a large bowl.

2. Add the softened cream cheese, mayonnaise, and sour cream to the bowl. Stir until fully combined and creamy.

3. Mix in the cotija cheese, chopped jalapeño, minced garlic, fresh lime juice, chili powder, smoked paprika, and chopped cilantro. Stir well.

4. Season with salt and pepper to taste.

5. Transfer the dip to a serving bowl. Top with extra cotija cheese, sliced jalapeños, more cilantro, and a sprinkle of chili powder.

6. Serve immediately with tortilla chips or refrigerate for up to 2 days. The dip can be served warm, cold, or at room temperature.

7. If the dip thickens after chilling, loosen it with a splash of milk or a squeeze of extra lime juice.

Notes

For the best flavor, don’t skip charring the corn. It adds delicious smokiness and depth.

You can make this dip a day ahead and garnish just before serving for freshest presentation.

Adjust the jalapeño (or add hot sauce) to reach your perfect spice level—taste as you go!
