Ingredients

1/2 cup unsalted butter, melted

1 cup light brown sugar

1 large egg

2 teaspoons vanilla extract

1/2 cup Biscoff cookie butter (plus 1/4 cup for swirling)

1 cup all-purpose flour

1/4 teaspoon salt

1/2 teaspoon baking powder

1/2 cup crushed Biscoff cookies


Instructions

1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.

2. In a large bowl, whisk melted butter and brown sugar until smooth.

3. Add the egg and vanilla extract. Whisk until well blended.

4. Stir in 1/2 cup of Biscoff cookie butter until incorporated.

5. Fold in flour, salt, and baking powder until just combined.

6. Spread the batter into the prepared pan evenly.

7. Drop dollops of remaining 1/4 cup Biscoff on top and swirl with a skewer.

8. Sprinkle crushed Biscoff cookies over the top.

9. Bake for 25–28 minutes, until edges are golden and center is set.

10. Let cool 15 minutes, then lift out and cool completely on a wire rack before slicing.

Notes

Let blondies cool fully before slicing for clean cuts.

Use crunchy Biscoff spread for added texture.

For an extra gooey bar, underbake by 1–2 minutes.
