Ingredients
1 cup old-fashioned rolled oats
1 cup plain Greek yogurt
1/2 cup milk (dairy or plant-based)
1 tablespoon chia seeds
1 tablespoon maple syrup
3/4 cup fresh blueberries (plus extra for topping)
2 tablespoons chopped walnuts (for topping)
1/2 teaspoon vanilla extract
Pinch salt
Instructions
1. In a medium bowl or a large mason jar, combine 1 cup old-fashioned rolled oats, 1 cup plain Greek yogurt, 1/2 cup milk, 1 tablespoon chia seeds, 1 tablespoon maple syrup, 1/2 teaspoon vanilla extract, and a pinch of salt. Stir well until everything is thoroughly mixed.
2. Gently fold in 3/4 cup fresh blueberries, making sure they are evenly distributed throughout the oat mixture.
3. Cover the bowl or jar with a lid or plastic wrap, and refrigerate overnight (or at least 4 hours).
4. In the morning, give the oats a good stir. Spoon into bowls or eat straight from the jar. Top with extra blueberries and about 2 tablespoons chopped walnuts.
Notes
You can use frozen blueberries instead of fresh—just stir them in frozen, no need to thaw.
Make it dairy-free by using non-dairy yogurt and plant milk.
The oats keep in the fridge up to 4 days—perfect for meal prep!
