Ingredients
1 tablespoon olive oil
4 (6 oz) salmon fillets
1 package (5.2 oz) Boursin Garlic & Fine Herbs Cheese
2 tablespoons mayonnaise
1/2 lemon, juiced
2 tablespoons fresh chives, finely chopped
salt and pepper, to taste
Instructions
1. Preheat oven to 400°F (200°C). Lightly oil a baking dish large enough to fit the salmon fillets in a single layer.
2. In a bowl, mix the Boursin cheese and mayonnaise until smooth.
3. Pat the salmon fillets dry and season both sides with salt and pepper. Arrange in the prepared baking dish.
4. Squeeze lemon juice over the fillets. Spread the Boursin-mayo mixture evenly over each piece and sprinkle with half the chives.
5. Bake for 13-15 minutes until salmon is opaque and flakes easily with a fork. For a golden top, broil for an additional 2 minutes.
6. Remove from oven, let rest 2 minutes, sprinkle with remaining chives, and serve with extra lemon if desired.
Notes
For best flavor, use fresh salmon fillets and fresh chives.
Do not overbake—remove salmon when just opaque and flaky.
