Ingredients
1 cup brownie mix (or prepared brownie batter)
2 tablespoons water (for brownie mix)
2 tablespoons vegetable oil (for brownie mix)
1 large egg (for brownie mix)
8 ounces cream cheese, softened
1/3 cup granulated sugar
1 large egg (for cheesecake)
1 teaspoon vanilla extract
1/2 cup chocolate chips (plus extra for topping)
1/3 cup heavy cream
3 ounces semi-sweet or dark chocolate, chopped (for ganache)
whipped cream (for topping)
Instructions
1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
2. Prepare the brownie batter according to package instructions, then spoon about 1 tablespoon into each liner. Smooth tops.
3. Bake brownie base for 8-10 minutes until just set but still soft. Let cool slightly.
4. In a bowl, beat softened cream cheese and sugar until smooth. Add egg and vanilla, mix until creamy.
5. Spoon cheesecake mixture evenly over the brownie bases, filling almost to the top.
6. Bake for 15-18 minutes until cheesecakes are just set and centers are slightly wobbly. Cool in the pan, then chill at least 2 hours.
7. For ganache, heat heavy cream until steaming. Pour over chopped chocolate and let sit 2 minutes, then stir until smooth.
8. Spread ganache over each cheesecake. Chill until set.
9. Top with whipped cream and sprinkle with extra chocolate chips before serving.
Notes
For the best texture, be sure your cream cheese is fully softened before mixing.
Don’t overbake—the centers should jiggle slightly for creamy cheesecake.
Customize by adding a spoonful of peanut butter or caramel between the brownie and cheesecake layers!
