Ingredients
2 pounds yellow or sweet onions
2 tablespoons unsalted butter
1 tablespoon olive oil
1 teaspoon kosher salt

Instructions
1. Peel the onions and slice them in half from root to tip. Place flat side down and thinly slice into half-moons.
2. In a large, heavy skillet over medium heat, melt the butter with olive oil. Add onions and sprinkle with salt.
3. Stir onions to coat them well. Cook, stirring occasionally, for about 10 minutes until onions soften and start to release moisture.
4. Reduce heat to low. Continue to cook, stirring every few minutes and scraping any brown bits, for 40 to 60 minutes, until onions are golden brown and jammy.
5. If using, add sugar halfway through cooking if you want more sweetness. Add balsamic vinegar or wine in the last few minutes to deglaze the pan and enhance flavor.
6. Remove from heat. Cool slightly before serving, or store as directed.
