Ingredients

2 cups finely shredded carrots

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

2 large eggs

1/2 cup vegetable oil

1/2 cup packed brown sugar

1/4 cup granulated sugar

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

8 ounces cream cheese, softened

1/3 cup granulated sugar

1 large egg

1/2 teaspoon vanilla extract

2 tablespoons brown sugar

2 tablespoons all-purpose flour

2 tablespoons butter, softened

2 tablespoons finely chopped walnuts or pecans

Instructions

1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.

2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

3. In another bowl, beat the eggs, oil, brown sugar, granulated sugar, and vanilla until smooth.

4. Fold the wet ingredients into the dry mixture until just combined. Stir in the shredded carrots and nuts, if using.

5. Spread the carrot cake batter evenly into the prepared pan.

6. In a medium bowl, beat the cream cheese, sugar, egg, and vanilla extract until smooth and creamy.

7. Pour the cream cheese mixture over the carrot cake layer and gently spread to cover.

8. In a small bowl, mix together the brown sugar, flour, butter, and nuts for the optional streusel. Sprinkle over the cream cheese layer.

9. Bake for 35-40 minutes, or until the edges are set and the center is just slightly jiggly.

10. Let cool completely in the pan, then refrigerate for at least 2 hours before slicing into bars.

11. Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for longer storage.

Notes

For best results, always use freshly shredded carrots for maximum moisture and flavor.

Chill the bars before slicing for clean, bakery-style edges.

Feel free to customize with add-ins like coconut, pineapple, or a different nut blend for your own twist.
