Description

This Cauliflower Shawarma Bowl is a quick dinner packed with roasted cauliflower, crispy chickpeas, fresh vegetables, and creamy tzatziki. It is one of my favorite easy dinner ideas when I want a healthy snack-style bowl that still feels hearty, colorful, and full of bold shawarma flavor. Perfect for meal prep, busy weeknights, and fresh food ideas, this easy recipe brings together simple ingredients in the most delicious way.


Ingredients

2 tablespoons olive oil

1 large head cauliflower, cut into florets

1 can chickpeas, drained and rinsed

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon ground coriander

1 teaspoon garlic powder

1/2 teaspoon turmeric

1/4 teaspoon ground cinnamon

1 teaspoon salt

1/2 teaspoon black pepper

4 cups chopped romaine lettuce

1 cup cherry tomatoes, halved

1 cucumber, thinly sliced

1/2 red onion, thinly sliced

2 cups cooked rice or quinoa

3/4 cup tzatziki

1 lemon, cut into wedges

2 tablespoons chopped fresh parsley or dill


Instructions

1. Preheat the oven to 425°F and line a large sheet pan with parchment paper.

2. In a large bowl, toss the cauliflower florets and chickpeas with olive oil, cumin, smoked paprika, coriander, garlic powder, turmeric, cinnamon, salt, and black pepper until evenly coated.

3. Spread the cauliflower and chickpeas on the prepared sheet pan in an even layer.

4. Roast for 25 to 30 minutes, tossing halfway through, until the cauliflower is tender and browned on the edges and the chickpeas are lightly crisp.

5. While the cauliflower roasts, prep the romaine, cherry tomatoes, cucumber, and red onion.

6. Divide the romaine and cooked rice or quinoa among serving bowls.

7. Top each bowl with the roasted cauliflower, chickpeas, tomatoes, cucumber, and red onion.

8. Spoon tzatziki over the top, then finish with fresh parsley or dill and lemon wedges on the side.

9. Serve immediately while the cauliflower is warm and the vegetables are crisp.

Notes

Do not overcrowd the sheet pan or the cauliflower will steam instead of roast, and you will miss those golden, caramelized edges that give this bowl its best flavor.
