Description

A delicious, quick, and comforting dish, these Cheesy Baked Stuffed Tomatoes feature juicy ripe tomatoes packed with a melty cheese and herb filling. Ingredients

4 large ripe tomatoes

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/3 cup panko breadcrumbs

2 tablespoons chopped fresh basil (or 1 tablespoon dried)

1 tablespoon chopped fresh parsley (or 1/2 tablespoon dried)

2 cloves garlic, minced

2 tablespoons olive oil, divided

1/2 teaspoon dried oregano

Salt and pepper, to taste


Instructions

1. Slice the tops off the 4 large tomatoes and gently scoop out the seeds and pulp, leaving a sturdy shell. Sprinkle the insides with salt and place upside down on a paper towel while you prepare the filling.

2. In a bowl, combine 1 cup shredded mozzarella cheese, 1/2 cup grated Parmesan cheese, 1/3 cup panko breadcrumbs, 2 tablespoons chopped basil, 1 tablespoon chopped parsley, 2 minced garlic cloves, 1 tablespoon olive oil, 1/2 teaspoon dried oregano, and salt and pepper. Mix until everything is well incorporated.

3. Pat the inside of the tomatoes dry. Spoon the cheese mixture evenly into each tomato, pressing down gently so the filling is mounded above the rim.

4. Arrange the stuffed tomatoes in a baking dish. Drizzle the tops with the remaining 1 tablespoon olive oil. Bake at 400°F (200°C) for 18–22 minutes, or until the cheese is bubbly and golden brown.

5. Allow the tomatoes to cool for 5 minutes. Garnish with extra basil or parsley if desired. Serve warm and enjoy!

Notes

For best results, use tomatoes that are firm and similar in size.

Salting and draining the tomatoes before stuffing prevents sogginess.

You can prepare the filling a day in advance and store it in the fridge.
