Ingredients

3 cups mashed potatoes

1 cup shredded sharp cheddar cheese

1/3 cup grated Parmesan cheese

2 large eggs

1/4 cup milk

2 tablespoons melted butter

2 tablespoons chopped fresh chives or parsley

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Extra cheddar cheese, for topping (optional)

Extra chopped herbs, for garnish (optional)


Instructions

1. Preheat your oven to 400°F (200°C) and grease a 12-cup standard muffin tin with butter or nonstick spray.

2. In a large mixing bowl, combine mashed potatoes, shredded cheddar cheese, grated Parmesan, eggs, milk, melted butter, chives or parsley, garlic powder, salt, and black pepper. Mix until well blended and creamy.

3. Spoon the mixture evenly into the prepared muffin tin, filling each cup nearly to the top. If desired, sprinkle extra cheddar cheese on top.

4. Bake for 25–30 minutes, until the muffins are golden brown at the edges and set in the center.

5. Allow muffins to cool in the pan for 5 minutes, then run a knife around each to release.

6. Transfer to a rack or serving platter, garnish with more herbs if you like, and serve warm.

Notes

Use starchy potatoes like Russet or Yukon Gold for the fluffiest texture.
