Ingredients
2 cups mashed potatoes
2 large eggs
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/3 cup sour cream
2 tablespoons chopped fresh chives (plus more for garnish)

1/4 teaspoon black pepper
2 tablespoons melted butter (for brushing muffin tin)
Instructions
