Ingredients

1 lb ground beef

1 packet taco seasoning

1 small onion finely chopped

2 cloves garlic minced

3 cups frozen tater tots

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup mayonnaise

1 tablespoon lime juice

1 teaspoon hot sauce or salsa

4 large flour tortillas 10 inch

1 tablespoon oil or butter for toasting

2 tablespoons chopped cilantro or green onions optional


Instructions

1. Cook the tater tots according to the package directions until very crispy, either in the oven or air fryer.

2. While the tater tots cook, heat a large skillet over medium high heat and add the ground beef, breaking it up with a spatula as it browns.

3. When the beef is mostly cooked, stir in the chopped onion and cook until the onion is soft and translucent.

4. Add the minced garlic and taco seasoning along with a splash of water, then simmer until the beef is fully cooked, coated in seasoning, and most of the liquid has evaporated.

5. In a small bowl whisk together the sour cream, mayonnaise, lime juice, and hot sauce or salsa to make a smooth creamy sauce, then set aside.

6. Warm the flour tortillas in the microwave under a damp paper towel or in a dry skillet so they are soft and pliable.

7. To assemble each burrito, spread a spoonful of the creamy sauce down the center of a warm tortilla, then add a scoop of seasoned beef, a handful of crispy tater tots, and a generous sprinkle of shredded cheddar cheese.

8. Fold the sides of the tortilla toward the center, then roll it up tightly from the bottom to enclose the filling and form a burrito.

9. Heat a clean skillet over medium heat with the oil or butter, then place the burritos seam side down and cook for a few minutes per side until the tortillas are golden brown and crisp and the cheese is melted.

10. Remove from the skillet, let cool for a minute, slice in half if desired, garnish with cilantro or green onions, and serve with extra sauce, salsa, or your favorite toppings.

Notes

For the crispiest texture inside the burritos, make sure the tater tots are cooked until deep golden brown before assembling—if they go in too soft, they’ll lose their crunch once wrapped and toasted.
