Ingredients

2 tablespoons olive oil

1 small onion, diced

3 cloves garlic, minced

1 (28-ounce) can crushed tomatoes

4 cups vegetable or chicken broth

1 cup heavy cream

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

18 ounces cheese tortellini (fresh or refrigerated)

1/2 cup grated Parmesan cheese

1/4 cup fresh basil, chopped (plus more for garnish)


Instructions

1. Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3–4 minutes until softened.

2. Add minced garlic and sauté for 1 minute until fragrant.

3. Pour in crushed tomatoes and broth. Stir, bring to a simmer, and cook for 5 minutes.

4. Add heavy cream, Italian seasoning, salt, and pepper. Stir to combine.

5. Add tortellini and cook according to package directions (usually 3–5 minutes), until they float and are tender.

6. Stir in Parmesan cheese and fresh basil. Taste and adjust seasoning as needed.

7. Serve hot, garnished with extra basil and black pepper if desired.

Notes

For extra veggies, add a handful of fresh spinach or diced zucchini when adding the tortellini.

To make it spicy, add a pinch of red pepper flakes with the seasonings.

If reheating leftovers, add a splash of broth or cream to thin out the soup as it thickens in the fridge.
