Ingredients

pounds boneless, skinless chicken thighs, cut into chunks

1 tablespoon Creole seasoning

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons vegetable oil

4 tablespoons unsalted butter

¼ cup all-purpose flour

1 large onion, diced

2 ribs celery, diced

1 green bell pepper, diced

8 ounces mushrooms, sliced

3 cloves garlic, minced

2 cups chicken broth

1 (14-ounce) can diced tomatoes (optional)

1 bay leaf

4 cups cooked white rice, for serving

2 tablespoons fresh parsley or green onions, chopped, for garnish


Instructions

1. Season the chicken with Creole seasoning, salt, and pepper.

2. In a Dutch oven or heavy-bottomed pot, heat the oil over medium-high heat. Add the chicken and brown on all sides. Remove and set aside.

3. Melt the butter in the same pot, then stir in the flour to make a roux. Cook, stirring constantly, until it turns a medium brown color (like peanut butter), about 5–7 minutes.

4. Add the onion, celery, bell pepper, and mushrooms. Sauté until softened, about 5 minutes. Add the garlic and cook for 1 more minute.

5. Slowly pour in the chicken broth while stirring. Add the diced tomatoes (if using), bay leaf, and more Creole seasoning to taste. Return the browned chicken to the pot.

6. Bring to a simmer, cover, and cook for 25–30 minutes, or until the chicken is tender and the sauce has thickened.

7. Serve hot over cooked white rice, garnished with parsley or green onions.

Notes

For an even deeper flavor, make the étouffée a day ahead and reheat before serving.

Adjust the Creole seasoning to make it milder or spicier, according to your taste.

Try adding shrimp or smoked sausage during the last 5 minutes of simmering for a fun variation.
