Ingredients
1 pound ground beef
1 tablespoon olive oil
1 medium onion, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
2 tablespoons tomato paste
1 can diced tomatoes, 14.5 ounces
1 can tomato sauce, 15 ounces
2 cans kidney beans, 15 ounces each, drained and rinsed
1 cup beef broth
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded cheddar cheese
1/2 cup sour cream
2 green onions, sliced
Instructions
1. Heat the olive oil in a large pot over medium heat, then add the ground beef and cook until browned, breaking it apart as it cooks.
2. Add the chopped onion and green bell pepper, then cook until softened. Stir in the garlic and cook for 30 seconds.
3. Mix in the tomato paste and cook for 1 minute to deepen the flavor.
4. Stir in the diced tomatoes, tomato sauce, kidney beans, and beef broth until fully combined.
5. Add the chili powder, cumin, smoked paprika, oregano, salt, and black pepper, then stir well.
6. Bring the chili to a gentle simmer, reduce the heat to low, and cook uncovered for 25 to 30 minutes, stirring occasionally.
7. Taste and adjust seasoning if needed, then serve hot with cheddar cheese, sour cream, and green onions on top.
Notes
Do not rush the simmering time, because giving the chili at least 25 minutes to cook gently is what helps the flavors blend and the texture thicken properly.
