Ingredients

1 lb chicken breast, cut into bite-sized pieces

3 cups broccoli florets

1 red bell pepper, diced

1 cup shelled edamame

4 green onions, sliced

3/4 cup roasted cashews

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce

2 tablespoons hoisin sauce

1/2 cup chicken broth

1 tablespoon cornstarch

1 teaspoon sesame oil

1 tablespoon brown sugar

1/4 teaspoon red pepper flakes

2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooked rice, for serving


Instructions

1. Cut the chicken into even bite-sized pieces and season it with salt and black pepper.

2. In a bowl, whisk together the soy sauce, hoisin sauce, chicken broth, cornstarch, sesame oil, brown sugar, garlic, ginger, and red pepper flakes until smooth.

3. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.

4. Add the chicken and cook for 5 to 7 minutes, stirring occasionally, until browned and nearly cooked through. Transfer it to a plate.

5. Add the remaining olive oil to the skillet, then stir-fry the broccoli and red bell pepper for 3 to 4 minutes.

6. Add the edamame and half of the green onions, then cook for 1 minute more.

7. Return the chicken to the skillet and pour in the sauce.

8. Stir everything together and cook for 2 to 3 minutes, until the sauce thickens and coats the chicken and vegetables.

9. Stir in the cashews and top with the remaining green onions.

10. Serve hot over cooked rice.

Notes

Do not overcrowd the pan when cooking the chicken, or it will steam instead of getting that flavorful golden sear.
