Ingredients

1/2 cup cocoa powder

1 cup all-purpose flour

1 cup sugar

2 large eggs

1/2 cup unsalted butter, softened

1 teaspoon baking powder

1/2 teaspoon baking soda

3/4 cup milk

2 cups heavy cream

7 ounces good-quality chocolate bars (dark or milk), chopped

1/2 cup powdered sugar

2 teaspoons vanilla extract

1 cup chocolate cookies or biscuits, crushed


Instructions

1. Preheat the oven to 350°F (175°C). Grease and line a square baking tin.

2. Cream together the butter and sugar until light and fluffy.

3. Beat in eggs and 1 teaspoon vanilla extract.

4. In a separate bowl, sift together flour, cocoa powder, baking powder, and baking soda.

5. Alternately add the dry ingredients and milk to the butter mixture, mixing gently until combined.

6. Pour the batter into the prepared tin and bake for 22–25 minutes, or until a toothpick comes out clean. Cool completely.

7. Whip 2 cups heavy cream with 1/2 cup powdered sugar and 1 teaspoon vanilla until soft peaks form.

8. Reserve half of the whipped cream for the topping.

9. Melt the chopped chocolate bars in a microwave or double boiler, then let cool slightly.

10. Fold the melted chocolate into half of the whipped cream to make a mousse.

11. Spread the chocolate mousse over the cooled cake layer.

12. Add the reserved whipped cream as the next layer, spreading evenly.

13. Optional: pour a simple ganache (made by melting chocolate with a splash of cream) over the whipped cream layer.

14. Decorate with chocolate pieces, whipped cream swirls, and sprinkle with crushed chocolate cookies or biscuits.

15. Chill for at least 2 hours until set. Slice and serve.

For best results, use high-quality chocolate and fresh heavy cream.
