Ingredients

2 cups all-purpose flour

2 cups granulated sugar

3/4 cup unsweetened cocoa powder

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

2 large eggs

1 cup buttermilk

1/2 cup vegetable oil

2 teaspoons vanilla extract

1 teaspoon peppermint extract

1 cup hot coffee or hot water

1 cup semi-sweet chocolate chips

3/4 cup heavy cream

2 tablespoons crushed peppermint candies


Instructions

1. Preheat the oven to 350°F and grease a 10 to 12-cup bundt pan very well.

2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

3. In another bowl, whisk together the eggs, buttermilk, vegetable oil, vanilla extract, and peppermint extract until smooth.

4. Add the wet ingredients to the dry ingredients and mix just until combined.

5. Slowly pour in the hot coffee or hot water and stir until the batter is smooth.

6. Pour the batter into the prepared bundt pan and smooth the top.

7. Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

8. Let the cake cool in the pan for 10 to 15 minutes, then carefully invert it onto a wire rack to cool completely.

9. To make the glaze, heat the heavy cream until hot but not boiling, then pour it over the chocolate chips. Let it sit for 1 minute and stir until smooth.

10. Spoon the glaze over the cooled cake and sprinkle with crushed peppermint candies.

11. Let the glaze set slightly before slicing and serving.

Notes

Do not overmeasure the peppermint extract, because even a little too much can overpower the chocolate and make the cake taste harsh instead of balanced.
