Ingredients
0.5 cup water
0.25 cup unsalted butter
0.5 cup all-purpose flour
2 large eggs
1.5 cups heavy whipping cream
0.25 cup powdered sugar
1 teaspoon vanilla extract
1 teaspoon matcha powder
edible decorations (gold stars, red & green sugar pearls)
Instructions
1. In a saucepan over medium heat, combine water and butter. Bring to a boil.
2. Remove from heat, add flour, and stir vigorously. Return to heat and cook until dough forms a ball. Cool for 5 minutes.
3. Add eggs one at a time, mixing thoroughly after each.
4. Transfer dough to a piping bag with a round or star tip.
5. Pipe 12 small rounds (1.5-inch) and 12 larger rounds (2-inch) on parchment-lined tray.
6. Bake at 400°F (200°C) for 20–22 minutes until golden. Let cool.
7. Whip heavy cream with powdered sugar until stiff peaks form.
8. Divide whipped cream: to one half add vanilla extract, to the other add matcha powder.
9. Cut puffs horizontally. Fill base of large puffs with vanilla cream, then matcha cream.
10. Top with smaller puff. Add a swirl of plain whipped cream on top.
11. Dust with powdered sugar and decorate with edible stars and pearls.
12. Serve immediately or refrigerate for up to 12 hours before serving.
Notes
Make sure the choux dough is cooled slightly before adding eggs to prevent scrambling.
Use high-quality matcha for a vibrant green color and clean flavor.
You can prepare the puffs a day ahead and assemble before serving to retain crispness.
