Ingredients
1 1/2 pounds Yukon Gold or red potatoes, cut into 1-inch chunks
1 bunch kale, stems removed and leaves chopped (about 6 packed cups)
2 large carrots, peeled and diced
1 medium yellow onion, diced
3 cloves garlic, minced
5 cups vegetable broth
1 cup milk or half-and-half (or unsweetened plant-based milk for vegan)
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper
1/4 teaspoon smoked paprika (optional)
Instructions
1. Heat olive oil in a large soup pot over medium heat. Add the onion and carrots, cooking for 4-5 minutes until the onion is soft and translucent. Add the garlic and cook for 1 minute until fragrant.
2. Add the potato chunks, thyme, salt, pepper, and smoked paprika (if using). Stir to coat the veggies in the seasonings. Pour in the vegetable broth and bring to a gentle boil. Reduce heat and simmer for 15 minutes, or until the potatoes are just fork-tender.
3. Stir in the chopped kale. Cover and simmer for 6-8 minutes, until the kale is wilted and tender but still bright green.
4. Lower the heat and stir in the milk or half-and-half. Warm through for 2-3 minutes without boiling. Taste and adjust seasoning as needed.

Notes
For a vegan version, use unsweetened plant-based milk.
