Description

This Cinnamon Roll Poke Cake is a soft, sweet, and easy recipe that brings all the cozy flavor of classic cinnamon rolls into one simple cake. It is perfect for brunch, dessert, holiday baking, and everyday food ideas when you want a quick breakfast treat, easy dessert, or crowd-pleasing cake recipe with warm cinnamon flavor and creamy frosting.

Ingredients

1 box yellow cake mix

3 large eggs

1 cup water

1/2 cup vegetable oil

14 ounces sweetened condensed milk

1/2 cup brown sugar

2 teaspoons ground cinnamon

1/4 cup unsalted butter, melted

8 ounces cream cheese, softened

2 cups powdered sugar

1 teaspoon vanilla extract

2 tablespoons milk

Instructions

1. Preheat the oven to 350°F and grease a 9×13-inch baking dish.

2. In a large bowl, mix the yellow cake mix, eggs, water, and vegetable oil until smooth.

3. Pour the batter into the prepared baking dish and bake for 28 to 32 minutes, or until a toothpick inserted in the center comes out clean.

4. Let the cake cool for 10 minutes, then use the handle of a wooden spoon to poke holes all over the top.

5. In a medium bowl, whisk together the sweetened condensed milk, brown sugar, ground cinnamon, and melted butter.

6. Slowly pour the cinnamon mixture over the warm cake, making sure it goes into the holes.

7. Let the cake cool completely.

8. In a separate bowl, beat the cream cheese until smooth.

9. Add the powdered sugar, vanilla extract, and milk, then beat until the frosting is creamy and spreadable.

10. Spread the frosting evenly over the cooled cake.

11. Slice and serve.

Notes

Do not frost the cake before it is completely cool, or the cream cheese frosting can melt and turn runny instead of staying thick and smooth.
