Golden tofu cubes simmer in a silky garlic cream sauce with sun-dried tomatoes, herbs, and basil for a satisfying vegetarian meal that feels special enough for guests but easy enough for a quick weeknight dinner. Ingredients
14 ounces extra-firm tofu, pressed and cubed
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
2 tablespoons cornstarch
1 tablespoon butter
4 cloves garlic, minced
1/3 cup sun-dried tomatoes, chopped
3/4 cup vegetable broth
1 cup heavy cream
1/2 cup grated Parmesan-style vegetarian cheese
1 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes
2 tablespoons fresh basil, sliced
Instructions
1. Press the tofu well for at least 20 minutes, then cut it into even cubes.
2. Toss the tofu with salt, black pepper, garlic powder, and cornstarch until lightly coated.
3. Heat the olive oil in a large skillet over medium heat and sear the tofu until golden on multiple sides, about 8 to 10 minutes total. Remove the tofu and set it aside.
4. In the same skillet, melt the butter and cook the garlic and sun-dried tomatoes for about 1 minute until fragrant.
5. Pour in the vegetable broth and stir well, scraping up any flavorful bits from the pan.
6. Add the heavy cream, Parmesan-style vegetarian cheese, Italian seasoning, and red pepper flakes. Simmer for 3 to 5 minutes until the sauce thickens slightly.
7. Return the tofu to the skillet and spoon the sauce over the cubes. Let it simmer for 2 to 3 minutes so the tofu absorbs the flavor.
8. Finish with fresh basil and serve hot.
Notes
Do not skip pressing the tofu, because extra moisture will keep it from browning properly and can thin out the sauce.
