Ingredients
3 medium ripe bananas
1 cup crushed pineapple, drained
3/4 cup granulated sugar
1/2 cup melted butter
2 large eggs
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup sweetened shredded coconut (divided: 1/2 cup in batter, 1/4 cup on top)
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
2. In a large bowl, mash bananas until smooth. Add sugar, melted butter, eggs, and vanilla. Stir well.
3. In a separate bowl, whisk flour, baking soda, and salt.
4. Gradually mix dry ingredients into the wet mixture until just combined.
5. Fold in drained pineapple and 1/2 cup shredded coconut.
6. Pour batter into loaf pan and sprinkle remaining 1/4 cup coconut on top.
7. Bake for 55–65 minutes, or until a toothpick inserted comes out clean.
8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
