Ingredients

1 cup finely ground yellow cornmeal

2 cups whole milk

3 tablespoons butter

3 large eggs, separated

1 teaspoon baking powder

1/2 teaspoon salt

1 tablespoon sugar (optional)


Instructions

1. Whisk together the cornmeal and milk in a medium saucepan. Cook over medium heat, whisking constantly, until thickened (about 3-5 minutes). Remove from heat and stir in the butter until melted. Let cool 5 minutes.

2. While the mixture cools, separate the eggs. Whisk yolks in a small bowl. In a clean bowl, beat egg whites with a pinch of salt until soft peaks form.

3. Stir the egg yolks, baking powder, salt, and sugar (if using) into the cooled cornmeal mixture.

4. Gently fold the beaten egg whites into the cornmeal mixture, taking care not to deflate the batter.

5. Pour into a buttered 2-quart baking dish. Bake at 375°F (190°C) for 30-35 minutes, until puffed and golden. The center should be just set.

6. Serve warm, scooped straight from the dish.

Notes

For extra flavor, fold in 1/2 cup shredded cheddar or a tablespoon of fresh herbs.

Best served fresh, but leftovers can be reheated gently in the oven.

To make it dairy-free, use unsweetened almond milk and vegan butter.
