Ingredients

1 1/2 cups graham cracker crumbs

3/4 cup granulated sugar, divided

6 tablespoons unsalted butter, melted

16 ounces cream cheese, softened

1/3 cup sour cream

2 large eggs

2 teaspoons pure vanilla extract

1 cup semisweet chocolate chips, melted and slightly cooled

1/4 cup unsweetened cocoa powder

2 cups mini marshmallows

1/4 cup heavy cream

1/2 cup semisweet chocolate chips (for drizzle)


Instructions

1. Preheat oven to 325°F (163°C). Line a 9×9-inch pan with parchment, leaving an overhang.

2. In a bowl, combine 1 1/2 cups graham cracker crumbs, 1/4 cup granulated sugar, and 6 tablespoons melted butter until sandy. Press firmly into the pan. Bake 8 minutes, cool slightly.

3. In a large bowl, beat 16 oz cream cheese and 1/2 cup sugar until smooth. Mix in 1/3 cup sour cream, 2 eggs, and 2 teaspoons vanilla just until blended.

4. Add 1 cup melted semisweet chocolate chips and 1/4 cup cocoa powder. Blend until uniform and creamy.

5. Pour filling over the crust. Bake 32–36 minutes, until edges are set and center jiggles just a bit. Cool to room temperature, then chill at least 3 hours or overnight.

6. Scatter 2 cups mini marshmallows over the cheesecake. Toast under broiler 1–2 minutes or use a kitchen torch for a golden top.

7. Heat 1/4 cup heavy cream until steaming. Pour over 1/2 cup semisweet chocolate chips. Wait a minute, then stir smooth. Drizzle over marshmallows.

8. Let set 10 minutes. Lift bars from pan, slice into 16 squares. Serve chilled or at room temperature.

Notes

For the cleanest cuts, use a hot, sharp knife and wipe between each slice.

Let bars chill overnight for best texture and flavor.
