Ingredients
1 lb salmon, cut into chunks
2 tbsp butter
1 small onion, diced
2 carrots, diced
2 celery stalks, diced
1 cup mushrooms, chopped
3 garlic cloves, minced
3 medium potatoes, peeled and diced
3 cups chicken broth
1 cup heavy cream
1 cup milk
2 tbsp fresh dill, chopped
1 tsp salt
1/2 tsp black pepper
Instructions
1. Melt the butter in a large pot over medium heat, then cook the onion, carrots, celery, and mushrooms until softened.
2. Stir in the garlic and cook for 1 minute until fragrant.
3. Add the potatoes and chicken broth, bring to a boil, then reduce the heat and simmer until the potatoes are tender.
4. Stir in the heavy cream, milk, dill, salt, and black pepper.
5. Add the salmon chunks and cook gently for 4 to 6 minutes, until the salmon is opaque and flakes easily.
6. Taste, adjust seasoning if needed, and serve warm.
Notes
Do not let the chowder boil after adding the cream and salmon, or the broth can separate and the salmon may turn dry.
