Ingredients

4 cups cooked chicken breast, cubed

8 ounces cream cheese, softened

1 cup sour cream

1 packet ranch seasoning mix (about 1 ounce)

1/2 cup milk

2 cups shredded cheddar cheese, divided

2 cups shredded mozzarella cheese, divided

8 slices bacon, cooked and crumbled

1/4 cup chopped chives or green onions

1/2 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13-inch casserole dish.

2. In a large mixing bowl, combine cream cheese, sour cream, ranch seasoning, and milk until smooth.

3. Fold in cubed chicken, half the crumbled bacon, 1 cup cheddar cheese, 1 cup mozzarella cheese, salt, and pepper. Mix gently.

4. Spread mixture evenly in the prepared casserole dish.

5. Top with remaining cheddar and mozzarella cheese, and sprinkle the rest of the bacon on top.

6. Bake uncovered for 25–30 minutes, until cheese is bubbly and casserole is heated through.

7. Remove from oven and let sit 5 minutes. Sprinkle with chopped chives or green onions.

8. Serve hot and enjoy!

Notes

To make ahead, assemble and refrigerate unbaked up to 24 hours; bake as directed.

For a lighter version, use light cream cheese, sour cream, and reduced-fat cheese.
