Ingredients

3 lbs ribeye roast

2 tablespoons olive oil

1 tablespoon kosher salt

2 teaspoons black pepper

2 tablespoons fresh rosemary, chopped (plus extra sprigs for garnish)

4 cloves garlic, minced

1 ½ cups cranberries, fresh or frozen

½ cup balsamic vinegar

⅓ cup brown sugar, packed

¾ cup beef broth

1 tablespoon Dijon mustard


Instructions

1. Pat the ribeye roast dry with paper towels. Rub all over with olive oil, then season with kosher salt, black pepper, chopped rosemary, and minced garlic. Let the roast rest at room temperature for 30 minutes. Preheat oven to 450°F (230°C).

2. In a small saucepan over medium heat, combine cranberries, balsamic vinegar, brown sugar, beef broth, and Dijon mustard. Simmer, stirring, until cranberries burst and sauce thickens slightly (about 10 minutes). Remove from heat.

3. Place the seasoned ribeye on a rack in a large roasting pan. Roast at 450°F (230°C) for 15 minutes. Reduce oven to 350°F (175°C). Spoon half of the cranberry glaze over the roast.

4. Continue roasting at 350°F (175°C), basting with remaining glaze every 20 minutes, until the internal temperature reaches 130°F (54°C) for medium-rare (about 1 hour to 1 hour 15 minutes).

5. Transfer roast to a cutting board, tent with foil, and let rest 20 minutes. Slice thickly and serve with extra pan juices and cranberry glaze. Garnish with rosemary sprigs.

Notes

For a deeper flavor, marinate the roast with the seasoning and herbs overnight in the fridge.
