Ingredients

12 ounces rigatoni pasta

1 tablespoon olive oil

1 pound Italian sausage

3 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped

3 cups fresh spinach

1 1/2 cups heavy cream

1/2 cup chicken broth

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes


Instructions

1. Bring a large pot of salted water to a boil and cook the rigatoni until al dente. Reserve 1/2 cup pasta water, then drain.

2. Heat olive oil in a large skillet over medium heat and cook the Italian sausage until browned, breaking it into small pieces as it cooks.

3. Stir in the minced garlic and chopped sun-dried tomatoes, then cook for 1 to 2 minutes until fragrant.

4. Pour in the heavy cream and chicken broth, then stir in the Parmesan cheese, Italian seasoning, salt, black pepper, and red pepper flakes.

5. Simmer the sauce for 3 to 4 minutes until it starts to thicken.

6. Add the fresh spinach and stir until wilted.

7. Add the cooked rigatoni to the skillet and toss until everything is evenly coated.

8. Add a splash of reserved pasta water if needed to loosen the sauce, then serve hot.

Notes

Do not let the cream sauce boil too hard after adding the Parmesan, or it can turn grainy instead of smooth and silky.
