Ingredients
2 1/2 cups graham cracker crumbs
1/2 cup granulated sugar
3/4 cup unsalted butter, melted

1 teaspoon pure vanilla extract
1 package (3.4 oz) instant banana pudding mix
1 cup whole milk
1 1/2 cups heavy whipping cream
1/3 cup powdered sugar
3 large ripe bananas
30 vanilla wafer cookies
1/2 cup caramel sauce (optional, for topping)
Instructions
1. Crush graham crackers and combine with 1/2 cup sugar and melted butter. Press mixture into the bottom and sides of a 9-inch springform pan. Chill for 20 minutes.
2. Beat softened cream cheese until smooth. Add 1 cup sugar and vanilla extract, mixing until creamy.
3. In another bowl, whisk pudding mix with milk until thickened (about 2 minutes). Blend pudding into the cream cheese mixture until fully combined.
4. Whip heavy cream with powdered sugar until stiff peaks form. Gently fold whipped cream into the cheesecake filling.
5. Slice bananas. Spread half the cheesecake filling into the crust. Layer half the banana slices and 15 vanilla wafers. Repeat with remaining filling, bananas, and wafers, pressing gently into the top.
6. Cover and chill for at least 6 hours or overnight.
