Creamy Cajun Sausage Pasta Dinner is the kind of easy dinner I make when I want something bold, cozy, and packed with flavor. This quick pasta recipe combines smoky sausage, tender bow tie pasta, colorful peppers, and a rich creamy Cajun sauce for one of my favorite dinner ideas, comfort food recipes, and easy weeknight food ideas.


Ingredients

12 ounces bow tie pasta

14 ounces smoked sausage, sliced

1 tablespoon olive oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small onion, sliced

3 cloves garlic, minced

2 teaspoons Cajun seasoning

1 teaspoon paprika

1 can diced tomatoes, drained

1 cup heavy cream

4 ounces cream cheese, softened

1 cup grated Parmesan cheese

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley


Instructions

1. Bring a large pot of salted water to a boil and cook the bow tie pasta until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.

2. Heat the olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned on both sides.

3. Add the red bell pepper, green bell pepper, and onion to the skillet. Cook for 4 to 5 minutes until softened.

4. Stir in the minced garlic, Cajun seasoning, and paprika. Cook for 30 seconds until fragrant.

5. Add the drained diced tomatoes, heavy cream, and cream cheese. Stir until the cream cheese melts and the sauce becomes smooth.

6. Stir in the Parmesan cheese, salt, and black pepper. Let the sauce simmer for 2 to 3 minutes until slightly thickened.

7. Add the cooked pasta to the skillet and toss until fully coated. Add a splash of reserved pasta water if needed to loosen the sauce.

8. Sprinkle with fresh parsley and serve hot.

Notes

Do not boil the sauce after adding the dairy, or it can separate and lose that smooth creamy texture.
