Ingredients

1 cup jasmine rice

1 cup coconut milk (full-fat for best results)

1 cup water or vegetable broth

1 cup pineapple chunks (fresh or canned, drained)

2 cloves garlic, minced

2 tablespoons coconut oil or neutral oil, divided

1/2 teaspoon salt

1/4 cup fresh cilantro or parsley, chopped


Instructions

1. Rinse the jasmine rice under cold water until the water runs clear.

2. In a saucepan, heat 1 tablespoon coconut oil over medium heat and toast the rice until fragrant, about 2 minutes.

3. Add coconut milk, water (or broth), and salt. Stir well and bring to a gentle boil.

4. Reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed and rice is tender.

5. While the rice cooks, toast the minced garlic in the remaining tablespoon of oil in a small skillet until golden and crisp.

6. Once rice is cooked, gently fold in the pineapple chunks and half the fresh herbs.

7. Top with toasted garlic and the remaining herbs. Serve warm and enjoy!

Notes

For extra flavor, add a little lime zest or juice just before serving.

Substitute brown rice for jasmine rice if you prefer a nuttier, more fiber-rich option (increase liquid and cooking time).
